The recipe is from the Hershey's website but I've made a few tweaks of my own. Here's my version in case you've lost your Muse and need to bake too:
Chocolate Peanut Butter Chip Cookies
2 cups all purpose flour
1 tsp baking soda
1/2 cup cocoa - I used a Ghirardelli brand of ground chocolate + cocoa
2 tsp instant coffee or espresso powder
1 cup butter, softened
3/4 cup light brown sugar
3/4 cup granulated sugar
1/2 tsp salt
2 tsp vanilla extract
2 eggs
10 oz peanut butter chips
Heat oven to 375
Beat butter, sugar, brown sugar, vanilla and salt until creamy, add eggs and beat well. Stir together flour, cocoa, baking soda and coffee. Gradually add to butter mixture, beating until well blended. Mix in chips.
Drop rounded teaspoons of the cookie mixture onto an ungreased cookie sheet. Bake 8-10 minutes until set. Cool slightly then remove from cookie sheet to wire rack to cool.
makes about 5 dozen cookies
My modifications: I reduced the amount of granulated sugar from 1 cup to 3/4 cup. I used the combo mixture of ground chocolate and cocoa that I mentioned earlier. I also added the coffee because a little coffee always makes chocolate taste better.
